Smash Burgers

□ 1 POUND GROUND BEEF

□ 1 POUND GROUND PORK

□ 1 TBS MINCED GARLIC

□ 2 tsp GARLIC POWDER

□ 1 tsp SALT

□ 1/2 tsp PEPPER

DIRECTIONS

  1. Mix all of the ingredients together into a stand mixer or bowl.

  2. Loosely roll the meat into 2-inch balls or roughly 2 1/2 oz in weight.

  3. If the meat is not cold put it in the freezer for 10-15 minutes. The key is to have the burgers cold when they hit the grill, this will help them smash easily.

  4. Turn the griddle, Blackstone, or cast iron to medium/high heat.

  5. Once the griddle is hot, place one burger ball onto the griddle at a time. Working quickly, place a piece of parchment paper on top of the meat and smash firmly until you have a thin patty. Continue until all of the patties are smashed out.

  6. Cook the patties for 2-3 minutes on each side or until they are nicely seared and the juices are coming out.

  7. Add cheese slices to half of the patties. Using your spatula, top each patty that has cheese with a plain patty. Transfer to a platter as they finish cooking.

  8. Place the buns face down in drippings on the griddle and toast them until they are golden brown.

  9. To assemble the burgers, place relish on the bottom bun and ketchup on the top bun. Top the relish with shredded lettuce, two tomato slices, and thinly sliced onions. Add your double patty, top with bun, and enjoy!

  10. If we are in a hurry, these cheesy smashburgers are just as delicious with simply relish and ketchup!
