Ham & Sausage Egg Bites

□ 8 EGGS

□ 1 CUP COTTAGE CHEESE

□ 1 CUP OF CHEDDAR CHEESE OR MOTZERELLA CHEESE

□ 1 CUP OF CHOPPED HAM, GROUND SAUSAGE, OR A MIXTURE OF BOTH

□ 1 TSP GARLIC POWDER

□ 1/2 TSP SALT

□ 1/4 TSP PEPPER

□ OPTIONAL*** 1/2 CUP OF CHOPPED VEGTABLES (BELL PEPPERS, CHERRY TOMATOES, SPINACH, ETC.)

DIRECTIONS

  1. Preheat oven to 375°.

  2. Mix all of the ingredients in a large bowl.

  3. Add the mixture evenly to a well-greased muffin tin or you can use silicone baking cups. The silicone baking cups are best for a non-stick option if you have them!

  4. Bake for 20-25 minutes. The egg cups should not be wet on top and should have puffed up slightly. Let cool for 5 minutes and enjoy!

  5. We like to make a double batch and reheat for a quick breakfast or snack! They are also great as egg sandwiches, just add them to an English muffin!
