Hamburger Buns
□ 2 CUPS WARM WATER
□ 6 TBS MILK
□ 5 1/2 TBS SUGAR
□ 4 tsp ACTIVE DRY YEAST
□ 2 LARGE EGGS
□ 7 CUPS BREAD FLOUR (1000 grams)
□ 1 TBS SALT
□ 5 TBS SOFTENED BUTTER
EGG WASH FOR THE TOP
□ 1 EGG
□ 1 tsp WATER
□ SESAME SEEDS, EVERYTHING BAGEL SEASONING, ITALIAN SEASONING, SHREDDED CHEESE ETC. FOR THE TOP
DIRECTIONS
Heat the water for roughly 45 seconds or until it reaches 105 degrees.
Add the milk, sugar, and yeast to the warm water and mix.
Let the mixture sit for 5 minutes or until it is foamy on top. Do not proceed if your yeast mixture is not foamy. Your buns will turn out flat and dense.
Add in eggs, butter, salt and roughly 900g or 6 cups of flour. After a dough ball has started to form slowly add in the remaining flour until the dough starts to slightly pull away from the edges of the mixing bowl. You want the dough to be soft but not sticking to your fingers.
Cover the bowl and place in a warm spot for 1-2 hours or until the dough has doubled in size.
Once the dough has doubled gently dump the dough out onto a lightly floured surface. Divide the dough into 18 equal pieces.
Gently form the dough balls by tucking the edges under and in.
Place the formed dough on a parchment lined baking sheet.
Cover and let them rest in a warm spot an additional 30 minutes or until they have puffed up and resemble a bun.
Make the egg wash by whisking the egg and water together in a small dish. Gently brush the tops of the buns with the egg wash and then sprinkle with sesame seeds or any seasoning of your choice.
On the bottom rack of your oven place 1 cup of water in a dish and then preheat the oven to 350°. This is going to create steam and make the buns extra fluffy while they cook.
Bake for 15 minutes or until they are golden brown on top. Do not open the oven while they are cooking, this will let the steam out and will result in a flatter bun.
Once they are done transfer to a cooling rack. Let cool slightly before serving! Store in a bread bag or an airtight container. If they are left out too long to cool without being covered, they will start to harden.
